Thanks Paulie, we have it sorted out now. How many kernel packages do you have installed? It turns out plesk/qmail has decided it doesn't like spamdyke anymore. After removing the spamdyke lines from /etc/xintetd.d/smtp_psa everything was fine. netstat -alnp | grep :25 shows lots of "TIME_WAIT"

I should have explained a bit more that actually we want mail to go to the new server too but how our server deals with mail isn't just based on the MX record, if it's got the domain name in /var/qmail/control/rcpthosts etc it will still take it and then either throw an error ...
