End-users rarely understand what SpamAssassin scores mean. Heck, I wouldn't even want to mess with it. Stick with sane global defaults is my motto. Have had no issues with amavisd-new (from EPEL) on EL 7 with and without Plesk. I do recommend not to use the Atomic repo, and stick with EPEL, also for ClamAV.

You should probably contact your hosting provider if you want this resolved. They can change or disable the mod_security rule for your web application. I know this may be seen as blasphemy on this forums, but there are way more reliable repositories available.

I'd recommend checking out IUS (https://ius.io) or Remi (http://rpms.remirepo.net) if you want to deviate from the stock PHP packages on a RHEL/CentOS system.

No, don't do that. That is an EL 6 package, not EL7. Also, the package is out-dated and from an unofficial repo that doesn't exist anymore.
