1) Can plesk users still customise the spam assassin settings via their plesk interface (ie. the score, etc.)?
2) Can we still customise spam assassin rules/scores?

Your question is missing some context, but I'm guessing that you're asking about replacing psa-spamassassin with qmail-scanner.

In that case:

1. No, psa-spamassassin provides a Plesk GUI, qmail-scanner does not. The atomic-scanner package does provide a Plesk GUI though.
