Symbols not publishing correctly after migration [SOLVED]

I have just migrated a lot of domains from old server (Plesk 8.1.0, FC2, php 4.3.10-2.4) to a new one (Plesk 8.6, Centos5, php 5.2.8-3.el5.art & ASL).

I notice that a number of symbols which published fine on the old server but on the new one they do not publish properly and come out as question marks or something similar.

This has been identified in websites created in Microsoft Publisher.

Can anyone suggest what might be different between the 2 servers which is now causing this? Any help would be most appreciated.

I have shown this with some tests at http://www.emailitistestaccount.co.uk/ if that helps people advise accordingly

Sorry. After much heart ache today, I have realised what it is. publisher wsa trying to save it is Western European (Windows), which worked fine on the last server. But on this, if it is changed to Unicode (UTF-8), it then worked - as it is right now on that test domain!
Scott, Please feel free to delete the post if you can and/or wish to, unless you want to leave it for anyone else who may have the same problem.
