I've already installed 8.1.0 on a test box and the upgrade seems fine. Also Ruby on Rails support is included now.

upgrade
how ready is the upgrade for a production server?
I am using centos + PSA stats how is this going to work?
I also have upgraded plesk to use arts php v5 what the hell is going to happen to that?
anyone tried it yet?

Don't know, and my advice is to wait and see. If you don't have a burning need that requires you to upgrade, you should let others be the first to run across the minefield. Just because it's out doesn't mean that it has to be installed. The swsoft forums are full of "early adopters" with broken upgrades. (I have no idea what the situation is for this upgrade cycle though)
The only way to REALLY be sure you don't hork your box is to have a testing platform and see what an upgrade breaks. Having plenty of luck helps too.
I'm in the process of setting up just such a testbox in VMware Server. It's freeish, and just totally rocks. I wonder if I could do that to my 1and1 box. . .

the only thing bugging me is that plesk had some vulns the last week

Well, I upgraded yesterday, and I've had a few issues. First, Qmail shut down and the Watchdog module didn't seem to notice even though it's configured to monitor and restart it. Then, my backup processes ran wild last night, consuming resources but not getting much done. I had to manually kill a bunch of PleskX.pl processes that had been running for hours (most of my backups usually take less than 5 minutes).
I executed some one-time backups without any problems, so I'll try the scheduled jobs again tonight and see what happens.
I'd advise waiting a little bit on this release, though.
I actually have a VMware server test environment, and I ran the upgrade there just to make sure it worked and see what the dependencies were, but I obviously didn't test it thoroughly before upgrading my production box. I'll do a better job of that next time around.
I don't see any reason why you couldn't run VMware on your 1and1 box, unless there is some kind of weird hardware config that VMware doesn't support. You may need to get additional IP's from them, though.

AAAKK! One of my clients was backed up over 20 times overnight (some successful, some failed), and several backup processes were still running when I checked this morning. I killed the processes, and they started back up again a few minutes later. I'm going to have to disable all the scheduled backups and do it manually for a while so I can monitor the processes.
Aside from the backup issues, my biggest gripe is all the Virtuozzo ads that are all over the interface now. There's no "I don't need it - quit shoving it in my face" button, either.

Plesk just installs whatever version of MySQL and PHP come with your OS by default.
