Automatically Running Yum

Ideally I would like to be able to enable the yum service so that my server will update itself nightly.

I added the ART channels to yum.conf, but I do not have a solid understanding of how yum works. What would happen if php update was released (not through ART)? Would yum attempt to install it, possibly breaking Plesk?

Yes, it would install the update if you set the system to update nightly. In order to enable automatic updates, goto setup -> system-services -> yum

My concern is that such an update could break Plesk. I have read about people whom installed (for instance) a mysql update through yum and plesk stopped working.

Updates that break your system would break your system if you installed it manually as well. If you're afraid your system might break, then use a separate box or vmware or something to test updates.
